This wine is inspired by the traditional "pista e mbutta" (press and put in the barrel), an ancient local technique for producing rosé from Nero d'Avola grapes, from which it takes its name. A blend of small Pachino bush-trained vineyards, both old and young vines, grown on different soils. This rich rosé features intense hues and a fragrant flavor. The grapes are harvested when fully ripe, imparting a character and density almost reminiscent of a red wine. Direct pressing and vinification of only the free-run must in barriques of various types. It ages until the following spring in stainless steel with continuous bâtonnage (stirring) performed according to the phases of the moon.
